*2 cups strained yoghurt or the Greek yoghurt Total which you can find in big markets
*2 medium sized cucumbers, peeled and shredded
*4-6 crushed garlic cloves
*1 teaspoon salt (you can add more if you want it a bit more salty)
*4-5tablespoons olive oil
*1-2 tablespoons vinegar
*2 tablespoons dill, chopped
*1 tablespoon parsley, chopped
*1 tablespoon ouzo (I personally use ouzo when I make 'tzatziki' because of a special taste which gives to tzatziki)
How to make it:
It's the easiest recipe ever.
Put the yoghurt in a deep bowl and stir it for a few minutes.
Put the peeled and shredded cucumber in a strainer and sprinkle with the salt and leave it for 30-40 minutes.
Drain and squeeze the cucumber trying to release all its fluids or at least as much as you can.
Add the drained cucumber in the bowl with the yoghurt and mix well but carefully otherwise you make it watery.
Add the garlic, salt, vinegar, oil and finally the ouzo (optional), dill and parsley. Mix again and put in the fridge for a few hours.
It's the perfect dip for bbq dishes and roasted meat and potatoes!
This is the original recipe of tzatziki and the way we make it in Greece. From place to place you might find another version of it but NEVER EVER the GREEK recipe for tzatziki includes any kind of cheese, cumin, onions or any other ingredients. You can avoid ouzo, or parsley or dill but all the rest are essential. It's not the Indian-Pakistani “raita” therefore it doesn't include any of the Asian spices.
