Pineapple Muffins
4 oz. cream cheese, softened
1 cup sugar
1 egg
1tsp.vanilla
1/2 cup sour cream
19 oz. crushed pineapple drained
2 cups flour
1 tsp. baking soda
1 tsp. salt
Beat cheese and sugar together. Beat in egg and vanilla. Add sour cream. Mix. Stir in pineapple.
Stir flour, baking soda and salt together and add. Mix only until moistened. Fill greased muffin cups 3/4 full. Bake in 350 oven for about 30 min. Let stand about 5 min. before removing from pan. Makes 16 med. muffins.
