Pineapple-Macadamia Bread
4 eggs
1 c. sugar
1/2 c. oil
3/4 c. pineapple juice
1/2 c. crushed pinapple,
with juice
1 TBS baking powwder
3 c. flour
1/2 c. macadamia nuts,
chopped
Combine eggs, sugar, oil, juice and pinapple and mix well. Shift together flour and baking soda and mix well with the pinapple mixture. Fold in nuts. Pour into greased and waxpaper lined 9×5 loaf pan. Bake at 350 degreesabout 50 minutes or fill in greased muffin pans and bake about 25 minutes.
