Ingredients:
Ingredients for a Sit-Down Meal for 4-6 people:
cardamoms 5
chilli powder 1 tsp
grated nutmeg 0.25 tsp
finely chopped coriander leaves 0.25 cup
finely chopped green chillies 1 tbsp
roasted besan 3 tbsp
egg 1
sliced onions-fried brown and crisp 125 gm
minced meat 0.5 kg
Grind together
chopped raw papaya 100 gm
salt to taste
chopped ginger 1 tbsp
chopped garlic 1 tbsp
cloves 8
seeds of black cardamom 2
khuskhus-roasted and ground dry 2 tsp
whole red chillies 4
cinnamon 0.5 tsp
dessicated coconut-lightly roasted 2 tbsp
mace 2 blades
ghee to pan fry the kababs
lemon juice to sprinkle over the kababs
Method:
Marinate the minced meat in the ground ingredients for 4-5 hrs.
Mix together the coriander leaves, green chillies, chickpea flour and egg.
Add to the meat and work at it for some time, almost kneading it like
dough.
Shape the mixture into round patties of desired size, and refrigerate for
half an hour or so.
Heat the ghee in a heavy-bottomed frying pan or griddle (enough to coat
base). Fry the kababs, browning first one side and then the other, over
medium heat.
Arrange them on a serving dish, sprinkle lemon juice and serve.
