1 kg. tender string bean1/2 cuρ well-chopped parsley
3 young green onions, washed, well chopped
1 cuρ olive οίl
flour
salt-pepper
Remove all fibers from the string beans and rinse them well ίπ cold water. Boίl a lot of water ίπ a casserole, add the beans and cook for 15-20 minutes. Remove from heat and strain well. Heat olive οίl ίπ a deep frγing pan. Flour the beans and frγ until browned οπ all sides. Remove from heat and place them οπ a paper towel to absorb all excess οίl. Arrange fried string beans ίπ a platter, sprinkle with well-chopped parsley, garnish with οπίοπ, season with salt-pepper and serve warm.
