1 chicken about 3 lbs
2 lemons
3 tbs butter
2 tbs flour
1 tbs mustard
1 cup wine
salt, pepper
Wash the chicken and cut into portions. Heat the butter in a saucepan, roll the pieces of chicken in the flour and sauté them. In a bowl mix the lemon juice with the wine and the mustard and pour this mixture over the chicken. Season with salt and pepper, cover the pan and simmer for about one hour, until tender. Serve immediately on a platter (separated from the sauce).
