Ingredients:
Ελαιόλαδο : 2 tablespoons
Chopped κρεμμύδι : 1 large
Trfimmeno ginger: 1 tablespoon
Grated cumin: 1 teaspoon
Chopped garlic: 2 cloves
red hot pepper: 1/2 teaspoon
turmeric: 1 teaspoon
Eyed beans: 2 mugs (dried)
Chopped tomatoes: 700 g.
garam masala: 2 teaspoons
Ζάχαρη : 1 teaspoon
Salt: as needed
Chopped parsley: 2 - 3 tablespoons, optional for sprinkling

Directions:
1. Wash eyed and place in water 2 - 3 hours to swell. Before cooking drain and keep.
2. Heat the olive oil and add the onion. The wilt soften and add the cumin. Cook for another minute and add the garlic and ginger. Cook a little longer, stirring.
3. Add the beans, tomatoes, the pepper, turmeric, the garam masala and sugar. Add 2 cups water when eating a boil, Cover the pan and lower the heat.
4. Simmer, until makalosoun beans well (Watch for the water and if necessary add a little at a time). Try of salt if you add some more garam masala.
5. Remove from heat and add parsley if desired.
6. Serve hot. Fits with rice and yoghurt.
