Since we are an International Society how about sharing on of your favorite recipes. I’m going to share my recipe for Red Sauce for pasta.
Ingredients:
11/2 lbs ground beef
(2) medium size onions
(3) cloves of garlic
(2) 15 oz. and (1) 8 oz cans of Hunts tomato sauce
(1) 6oz can of Contidina tomato paste
(1) 15 oz can of diced tomato’s
(1) cup red wine (burgundy) screw top is fine
(½) cup fresh chopped parsley or (2) tbs. dried
(I/8) tsp. ground allspice
In large skillet brown the ground beef with one of the onions (chopped) and one clove of garlic (minced) and half of the parsley. Drain on paper towels.
In 8 quart sauce pan add one onion (chopped) and remainder of the parsley. Use a little oil or butter . Sautee over medium heat until onion is tender. Turn heat up to high and add the wine and the allspice cook until liquid is reduced by half.
Add the tomato sauce, tomato paste, and diced tomato’s .Chop and add the remaining two cloves of garlic. Add salt and pepper to taste.
Cook over low heat for about two hours with a screen type pan cover to help keep sauce from splattering all over the stove.
Enjoy over your favorite pasta . Good for lasagna and chicken dishes calling for a good red sauce.
