TEA SCONES
2 cups sifted flour
2 TBL sugar
3 tsp baking powder
1/2 tsp salt
5 TBL butter, chilled
1 egg, beaten
approximately 3/4 cup milk
Preheat oven to 425?. Sift together the flour, sugar, baking powder & salt.
Chop in the butter with a pastry blender until the flour-coated particles
of butter are the size of coarse cornmeal.
Add the egg & about 3/4 of the milk. Stir quickly & lightly, only until no
flour shows. Add more milk if needed to make a soft dough.
Turn the dough out on a floured surface & knead gently about 15 times. Cut
the dough in 1/2. Shape each 1/2 into a ball, press each down into a round
about 1/2″ thick & cut into 8 wedges like a pie.
Place the wedges on a greased cookie sheet without allowing the sides to
touch. Glaze, if desired with lightly beaten egg. Bake until deep golden
brown, about 12 minutes.
