10 big, fresh zucchini flowers
150 gr. feta cheese
100 gr. manouri cheese
1 egg
1 tablespoon fresh, finely chopped sweet basil
1 clove garlic, peeled, minced
salt-pepper
baking powder
1 cup frying dough
seed oil for frying
Wash carefully the zucchini flowers (so that they do not split) and strain well. Grate the feta and manouri cheese in a big bowl and add the egg, basil and garlic. Add salt and pepper and mix thoroughly. Correct the seasoning and use a tablespoon to stuff carefully the zucchini flowers with the mixture. Cover well and place them in the fridge for a while to thicken. In a bowl, mix flour together with beer or yeast water, salt and baking powder. Heat seed oil in a frying pan. Dip carefully the zucchini flowers in the mixture and fry over medium heat.
