homemade macaroni cheese
very easy and tastier than a packet.
ingredients:
butter or margarine(one thats okay for cooking)
plain flour
milk
cheese (medium strength cheddar should do)
macaroni or any other pasta
-basically melt a little butter, few tablespoonfuls in a heavy pot, add in flour gradually by whisking. add enough flour to make a smooth paste with the butter (a basic roux – (spelling?)). heat through for a minute or two to cook through the flour.
-whisk in milk. approximate the amount to how hungry you are and how thick you like your sauce.
-keep whisking and bring sauce to the boil. add some salt and pepper and youve got a basic white sauce.
-throw in wads of cheese and whisk till all the cheese is melted through nicely. taste to see if its cheesey enough for your likeing.
-you can at this stage mix with pasta and eat. i sometimes like to mix with pieces of sausage or bacon and place in a dish and oven bake, topped with some grated cheese.
-eat.
