These are really fast and easy!
Quick and Easy Yeast Rolls
1 pkg. dry yeast
3/4 c. warm water
2 Tbs. sugar
2 Tbs. veg. Oil
½ tsp. Salt
1 egg
2½ -2 2/3 C. flour
Soft butter or marg.
Dissolve yeast in water in 2½ qt. Bowl. Add sugar, oil, salt and egg.
Stir to dissolve sugar and salt.
Stir in 1 cup flour and stir until smooth. Cover with a cloth and place
over a bowl of hot water. Let rise 15 minutes.
Grease square pan 9″x9″x2 ½”. Stir down batter and add 1½ cups flour. Stir until mixed and turn out on floured board. Knead 3 minutes. If sticky add ¼ cup flour. Divide dough into 16 pieces and shape quickly into balls and brush tops with butter. Cover with cloth and place on a rack over a bowl of hot water. Let rise 25 min. Bake 12 –15 minutes at 425? or until light brown. Remove from pan to wire rack. Brush tops with soft butter.
Cinnamon Rolls
Double recipe. Divide dough into 2 pieces. After kneading, roll dough into rectangle 12″x9″.
Spread with 2 tsp. butter and sprinkle with ½ c. sugar and 2 tsp. cinnamon. Add raisons if desired. Roll up. Pinch edges to seal. Cut roll into 12 1″ pieces. Arrange in pan. Brush tops with butter. Cover with cloth and place on rack over bowl of hot water. Let rise 25 min.
Bake at 425? 12-14 min or until light brown. Brush with butter.
Glaze: Mix ½ c. powdered sugar and 1 Tbs. Milk. Drizzle with glaze while warm.
