Ingredients (for 8 to 10 people):
1 1/2 cups virgin olive oil
1 packet fine semolina
1 cup all-purpose flour
powdered cinnamon
sugar
For the syrup:
3 cups sugar
6 cups water
1 tsp lemon zest
Method
Prepare the syrup, by adding the sugar to 6 glassfuls of hot water. Stir well with a spoon till the sugar dissolves. And the lemon zest and boil for two minutes.
Empty the oil into a pan with a heavy base. Allow to heat until smoking. At once add the semolina. Stir with a wooden spoon until the semolina starts to darken, then add the flour and stir well. Once the semolina is cooked and has a dark coffee colour, gradually add the syrup, and continue stirring so that it does not rise and boil over. When the semolina has taken up the syrup, take the pan off the heat and cover with a cotton cloth for about 10 minutes.
Empty it into a mold. Dust with a little cinnamon and sugar, and serve.
