Ingredients:
Ingredients for a Sit-Down Meal for 4-6 people:
plain flour 550 gm
plain yoghurt 250 gm
salt 1 tsp
baking soda 1 tsp
damp cloth
butter/ghee- optional
onion seeds for garnish
a little milk or water
Method:
Sift 500 gm plain flour, 1 tsp salt, and 1 tsp baking soda together in a
bowl. Stir in 250 gm plain yoghurt and mix together to form dough. Lightly
knead until soft and smooth; your finger should be able to press into the
dough with hardly any pressure. Shape into a ball and place into a bowl.
Cover with a damp cloth and leave until doubled in size. This may take
around 6 hours, depending on the temperature.
Knock back the dough and knead in a lightly floured surface, adding just a
little extra flour if it sticks. Shape into a ball and return to bowl.
Cover and leave to rise again until doubled in size; this should take
lesser amount of time.
Turn out on to a lightly floured surface and knead. Break off 6 to 8
walnut-sized pieces and shape into balls. Place on a lightly floured
surface, cover and leave for fifteen minutes until smooth and puffed up.
Set the oven to 220 degree C and lightly grease a baking sheet.
Roll out balls on a lightly floured surface into flat oval or round
shapes, stretching and pulling with your hands. Lightly brush each with a
little milk or water, and then sprinkle over onion seeds. Place on baking
sheet and bake for five minutes until they bubble up unevenly and have
specks of brown. Remove and keep warm until all are baked. To make even
richer, brush with melted ghee or butter as soon as they come out of the
oven.
