Wine
Freeze leftover wine into ice cubes for future use in casseroles and sauces.
Wild Rice
Add to scrambled eggs.
Steak
Heat slices of steak with sour cream, diced onions, garlic, pepper, 1 can cream of mushroom soup and enough water to make a nice sauce. Serve over egg noodles.
Slice it very thin, then heat up in a skillet with sliced green bell pepper, slivered onion and fajita seasoning. Serve in warmed flour tortillas as fajitas.
Roast Beef
Cut into 1/4-inch slices. Dip into beaten egg, then into dry bread crumbs. Fry the slices in oil or butter until hot and golden.
Put into a crock pot with some canned green chiles, a little cumin, a little garlic, and a little water. Cook until the beef is easily shredded, then use as a taco or burrito filling.
Top meat slices with cooked onions and peppers and provolone cheese; serve on hoagie rolls.
Pie dough
Roll dough very thin, dot with butter, then sprinkle with cinnamon and sugar. Roll up, slice off 1-inch pieces and bake flat side down. Kids love these!
Meat Loaf
Blend a can of cream of chicken or cream of mushroom soup with 3/4 cup milk. Spread about 1/3 of this on the bottom of a casserole dish. Layer slices of leftover meat loaf and mashed potatoes over this. Top with the remaining soup mixture. Bake at 325 degrees F for about 45 minutes.
A leg of lamb is a versatile piece of meat, whether in its original cooking or as leftovers.
1 Cut some of the lamb in slices and add to a Pasta with Marinara Sauce.
2 Cut into thin slices and make Lamb, Peppers and Onions Pita with Sour Cream Dill Sauce.
3 Cut into slices and make Lamb Sandwich with Caramelized Onions and Cheese.
4 Don't forget to save that bone to make a great Barley Soup.
5 Make a Shepherd's Pie. Cut the meat and any vegetables into small pieces, place in the bottom of an appropriately sized baking dish. Add some gravy or broth if desired. Then top with leftover or freshly made mashed potatoes. Brush the potatoes with melted butter. Bake in a 350° F oven until lightly browned and bubbly, about 15 minutes.

1 One of my favorite uses for leftover mashed potatoes is Pierogie Casserole.
2 Another use for leftover mashed potatoes is Potato Pancakes.
Eggplant
1 This really didn't take much thought. The Eggplant Stew with its tomato broth is a natural for Pasta with Eggplant. Just add some garlic and oregano. Reheat and toss with hot pasta. If you don't have quite enough for a pound of pasta add more tomatoes and seasonings.
2 The Light and Easy Eggplant Parmesan is great leftover at room temperature as a sandwich in Italian bread or rolls. Just add some sharp, mozarella, provolone, fontina or asiago cheese.
