Harvest Muffin
1 cup flour
1 cup whole wheat flour
1 cup sugar
2 tsp. soda
2 tsp. cinnamon
1/2 tsp salt
1/4 tsp cloves
2 cups shredded peeled apple
1/2 cup shredded carrots
1/2 cup coconut
1/2 cup raisins
1/2 cup chopped nuts
3/4 cup oil
1/4 cup milk
2 tsp. vanilla
2 eggs
Grease muffin cups or line with paper baking cups.
Combine flours, sugar, soda, salt, cinnamon and cloves. Add carrots, apple, coconut, raisins and nuts, mix well set a side. Mix egg, oil, milk and vanilla. Add to dry ingredients, mixing only to moisten. Fill muffin cups. Bake at 350 degrees for 20-25 mins. Makes about 18
