Ingredients
500 gr brown lentils
3 cloves of garlic, peeled
3 ripe tomatoes, peeled and finely chopped
1 large onion, finely chopped
salt
1 pinch sugar
ground black pepper
2 – 3 tbls wine vinegar,
½ cup olive oil
1 tsp dry oregano
2 bay leaves.
Method
Wash the lentils, strain in a sieve and discard the water. Add 1.5 litres of water in a pot, bring to boil and add all the ingredients except the vinegar, salt and oil. Simmer for about an hour and 15 min. Add the remaining ingredients, boil for 5 min more and check seasoning before serving.
