Easy French Onion Soup

Easy French Onion Soup
3 lbs bag of yellow onions
2 quarts beef broth
Loaf French bread
Swiss cheese
½ stick butter or margarine
½ cup extra dry vermouth

Peel and slice onions in thin slices
Sauté onions in butter in 8 quart sauce pan
Cook onions until slightly brown
Turn heat to high and add the vermouth
Cook until vermouth is reduced by half
Add beef broth and simmer for 30 minutes.
Salt and pepper to taste
Toast slices of French bread in oven broiler both sides
Top toasted bread slices with Swiss Cheese and broil until cheese is melted.

Top each bowl of soup with toasted cheese bread slice
