4 medium bananas
2tbls toasted sesame seeds
300ml of olive oil
100g plain flour
50g potato flour
200g sugar
Mix the two flours together in a large bowl adding in a glass of water. With a wooden spoon mix well until you create a smooth paste. Cover the bowl with a cloth and leave to rest in a cool place for approx. 20 minutes.
Slice the bananas approx. 1cm thick, dip them in the flour paste and with the help of a spoon, deep-fry them in a tall saucepan of hot olive oil for approx. 1 minute until golden. Take out and place on some kitchen roll allowing the excess oil to drain.
In the meantime, melt the sugar in a small pan with 4tbls of water and stir until you get a light caramel colour. With the help of a long wooden skewer, pick up the banana fritters and dip into the hot caramel sauce. Place them on a grill stack, sprinkle some sesame seeds on top and allow to cool enabling the caramel to harden.
