1/2 liter of milk
vanilla
1/2 – cup of sugar
3 or 4 egg yolks
Traditional recipe : bring to the boil the milk with the sugar and vanilla.During this time, break the eggs by separating the white from the yolks.Slowly pour hot milk on the yolks, while stirring regularly.Put it back in the pan, on low.Stir until the cream is smooth.Don't let it boil.Take it off the burner, still stirring a few moments, then let it cool.
Domestic recipe expensive and easier to succeed: use 2 egg yolks plus a teaspoon of starch or 3 egg yolks plus 1/2 teasp of starch.Continue as in the traditional recipe above.You can let it heat until the cream bubbles a little.If the cream had inadvertently become slightly granulous, put it in a cold pot, whip it, and it will bind again.
You can flavour the English pudding: with chocolate, with cocoa, coffee, alcohols and various liquors, caramel, crushed pralines, with orange or pieces of lemon peel.
