Cranberry Chocolate Chip Muffins
2 cups all-purpose flour
1/2 cup sugar
1 tablespoon baking powder
1 tablespoon grated orange rind
1/2 cup dried cranberries
1/2 cup chopped pecans
1/2 cup mini-chocolate chips, semi-sweet
1 egg, beaten
1/2 cup melted butter or oil
1 cup milk
1 teaspoon vanilla
Preheat oven to 400 degrees. Line 12 muffin cups with papers. In a large bowl, mix the flour, sugar, baking powder, orange rind, cranberries, pecans and chocolate chips. Make a well in center and add egg, butter, milk and vanilla. Mix just until flour is moistened. Spoon into muffin cups. If you like, sprinkle tops with a little extra sugar. Bake 15-20 minutes–until risen and golden. Enjoy! makes 12
