675 γρ. / 3 φλιτζ. μετρ. ζάχαρη
225 ml γάλα
μια πρέζα αλάτι
225 γραμ. ψιλοκομμένους χουρμάδες
1/2 κουτ. γλυκού κανέλα σε σκόνη
ξύσμα ενός πορτοκαλιού
25 γραμ. / 2 κουτ. σούπας βούτυρο
7 κουτ. γλυκού εσάνς βανίλιας
280 γραμ. καρύδια Πεκάν (ή, αν δε βρείτε, κοινά καρύδια), χοντροκομμένα
Σε μια κατσαρόλα βάζετε το γάλα, τη ζάχαρη και το αλάτι και τα ανακατεύετε, σε χαμηλή φωτιά, μέχρι να διαλυθεί η ζάχαρη. Βράζετε το σιρόπι αυτό μέχρι το σημείο που μπορείτε να πλάσετε μ’ αυτό μια μαλακή μπαλίτσα (δηλαδή στους 112°C) και τότε ρίχνετε τους κομμένους χουρμάδες, την κανέλα και το ξύσμα του πορτοκαλιού. Συνεχίζετε το βράσιμο, μέχρι το μείγμα να ξαναφτάσει στο στάδιο της «εύπλαστης μπαλίτσας» και τότε το αποσύρετε από τη φωτιά και προσθέτετε το βούτυρο, ανακατεύοντας. Το αφήνετε να γίνει χλιαρό, ρίχνετε και την εσάνς βανίλιας και το χτυπάτε καλά μέχρι να πήξει. Ανακατεύοντας πάντα, προσθέτετε τα μισά καρύδια και συνεχίζετε το χτύπημα μέχρι του σημείου που θα μπορείτε να δώσετε σχήμα στο μίγμα. Ρίχνετε τα υπόλοιπα καρύδια σ’ ένα φύλλο αντικολλητικό χαρτί ή λαδόκολλα και, αφού πλάσετε με το μείγμα μπαλίτσες, τις κυλάτε πάνω από τα σπασμένα καρύδια πιέζοντας τες. Αφήνετε τις μπαλίτσες να σταθούν λιγάκι, στη συνέχεια τις κόβετε φετούλες και τις σερβίρετε.
