Eyed beans with tomatoes

ingredients (per 8 servings)

Black Eyed Peas: 500 g.

Ελαιόλαδο : 1/4 cup

Onion: 1 moderate, finely chopped

tomato paste: 1 tablespoon

Tomato juice: 400 ml (slightly condensed)

Salt, pepper: as you like



Put the beans in a saucepan and add plenty of water, to cover them well. Put them on the fire to boil until soft, but keep a little, 30 minutes. Remove from the heat and drain.

Put the olive oil in the pot and add the onion. Cook over medium heat, stirring regularly, well until smooth, 5 minutes.

Add the tomato paste and cook, stirring occasionally, for another minute.

Add the tomato juice and 1 cup of water and when they boil, add the beans. Simmer, until well softened beans, other 10 – 15 minutes.

Season to taste and remove from fire.
