Green beans with potatoes

Ελαιόλαδο : 5 tablespoons

Onion: 1 large, chopped

Garlic: 2 ground cloves

Oregano: 2 tablespoons chopped fresh or 2 teaspoons dry

Tomatoes: 1 kilogram, grated or past the blender

Salt: 2 teaspoons

Pepper: 1/2 teaspoon

Green beans: 700 g. fresh or frozen

Potatoes: 500 g. peeled and cut into large cubes

Parsley or basil: 4 tablespoons, chopped

Ζάχαρη : little, if necessary



In saucepan, heat the olive oil and add the onion. Cook over medium heat, stirring regularly, well until smooth, 5 minutes. Add the garlic and oregano and cook half a minute more.

Add all remaining ingredients (put sugar only if it is sour tomato) and turn up the heat to boil the food. Cover the pot, reduce heat and simmer until tender vegetables well. If necessary add a little water or if it is very juicy, uncover the pot to evaporate a lot of water.

Serve warm or at room temperature.
