Boiled zucchini salad
The young tender zucchini, are wonderful, even plain, cooked as salad. Delicious, healthy and dietary.

Ingredients:
Very small, blandly zucchini:
1 kilogram
Salt, pepper:
as you like
Sliced κρεμμύδι :
1 small
Chopped parsley:
2 - 3 tablespoons
Ελαιόλαδο :
4 tablespoons
Lemon juice:
by 1/2 or 1 lemon
Directions:
1. Put in a saucepan of water to boil. Wash and cut the stem and blossom end of the squash (if flower, hold it for another recipe eg. stuffed or kolokythokroketes).
2. Put the zucchini in a pot, boil until soft (10 - 20 minutes, depending on their size). Take them out carefully and place on a platter. Allow to cool (if you want to retain the bright green color, when removed from the pot, put them in cold water with ice, stop boiling)
3. Cut the zucchini into rounds, salt and pepper, sprinkle with onion and parsley, Drizzle with olive oil and lemon juice and serve.

Good evening Katerina. The time in the pressure cooker is not stable, It depends on the pressure cooker model (at what temperature and pressure working) and whether the zucchini are small, medium or large. Eg for my kettle is on 5 minutes zucchini moderate. You should see the times given by the manufacturer of your cooker and thereafter, To make your tests. Better start with the shortest time that gives you're not quite boil, increase the bit next time.
