Ingredients:
Water: 1 and 3/4 mugs (at room temperature)
Honey: 2 tablespoons
Dry μαγιά : 2 teaspoons
White flour: 3 and 1/2 mugs (570 gr.)
Wholemeal flour: 1/2 mug (80 gr.)
Salt: 2 teaspoons
chopped fresh rosemary: 2 full tablespoons
Rabelaisian olives: 1 and 1/2 mug (drained and dried with kitchen paper)

Directions:
1. Put the water in the bowl of the mixer, honey and yeast. Stir to mix and add the white and black flour. Knead on low speed for 3 minutes. Stop the dough, cover the bowl and let the dough rest for 20 minutes.
2. Uncover the dough, make a puddle in the center and add the salt and rosemary. Knead 6 minutes at low speed. If the dough sticks too much, add 1 - 2 tablespoons flour.
3. Pour the dough on a lightly floured surface and open it in a rectangle 40 X 60 from. about. Spread the olives on top, leaving a margin 2 all around.
