Smelt: 600 g. about
Salt: 1 teaspoonful and extra if needed
Cayenne pepper: 1/2 teaspoon
Flour: 1 mug
Sunflower (or other vegetable oil): plenty for frying.
Wash the smelt and dry as you can.
Large food bag put flour, salt and pepper. stir. Add the fish, close the bag and shake well to cover fish. Remove from the bag and place in colander, the shake to drop the excess flour.
Heat the oil in a deep fryer or deep saucepan. Add a few – few fish and fry for 2 – 3 minutes. Take them out on a paper towel to drain. If you want to add a little more salt.
Serve hot with freshly cut lemon.
